Avocado Soup


Ingredients for Avocado soup:


- 5 avocados
- 2 onions, chopped
- 2 cups - 460ml vegetable stock
- 1 cup - 240 ml of milk
- 1 lemon
- 3 egg yolks
- Handful coriander
- salt and ground black pepper to taste

How to make Avocado soup:


Remove the flesh from the avocado and place in a blender.
Add 1 cup -240 ml of cold water and the milk and mix until smooth.
Put some olive oil in a saucepan and fry the onion.
Ad the vegetable stock and bring to a boil.
Add the avocado mix in the pan and heat, stirring, but do not boil!
Place the egg yolks with the lemon juice in a bowl. Whisk everything well and pour it into the soup.
Season with salt and pepper.
Ladle the soup and garnish with chopped coriander.
