Grilled Fajita Skewers



INGREDIENTS

Serves 12-14
1 to 2 onions, quartered
6 bell peppers, cut in 1.5” squares
1 pound cubed steak
1 pound cubed chicken breast
1 pound shrimp, deveined and peeled with the tail on
3 teaspoons salt (1 teaspoon per protein)
3 teaspoons pepper (1 teaspoon per protein)
3 tablespoons garlic powder (1 tablespoon per protein)
3 tablespoons chili powder (1 tablespoon per protein)
3 teaspoons cumin (1 teaspoon per protein)


PREPARATION
1. Place each meat in a gallon sized plastic bag and cover with dry ingredients. Close the bag and shake until evenly coated.
2. Prepare skewers by layering onion, bell pepper, and protein. (Be sure not to mix proteins on the same skewer, as they have different cook times.)
3. Grill the skewers over medium-high heat, flipping once, until the protein’s internal temperatures are as follows:
For Steak: 155ºF/70ºC
For Chicken: 165ºF/75ºC
For Shrimp: 145ºF/65ºC

Pizza Grilled Cheese



2 tablespoons butter, soft
2 slices white sandwich bread
¼ cup marinara
4 slices low-moisture mozzarella cheese
2 ounces sliced pepperoni (6 thin slices)



Melt the butter in a medium nonstick skillet over medium heat. Put the bread in the pan, then top with the marinara, spreading to coat the slices. Top each slice the cheese and pepperoni, dividing evenly. Cook until the cheese starts to melt and the bread is golden, about 2 minutes, then close the sandwich and cook until the cheese is completely melted, about 3 minutes more. Enjoy!

Grilled Bacon-Wrapped Jalapeño Poppers




Here's the recipe:

Combine equal parts shredded cheese and cream cheese in a bowl. Our shredded cheese was cheddar, but you could probably use any kind of cheese and it would be delicious. That’s just how cheese is.

Set a jalapeño on a cutting board to find it’s flattest side. Make an “I” shaped cut on the opposite side (the side facing up) and scoop out all of its insides.

Fill with cheese mixture.

Wrap with bacon so that a start and end of the bacon strip are on the left and right side of the jalapeño, and 1 skewer will puncture both.

Grill covered over medium heat, on a sheet of foil to catch drippings, for about 15-20 minutes.
